Where Croissants Become Haute Couture

Authentic French croissant recipes take on new life thanks to the creativity and expertise of Sofitel Chefs worldwide, with this limited-edition croissant collection. Inspired by La Haute couture, the concept blends classic French techniques with captivating and boldlocal flavours. Right on time for Mother's Day (or Parents' Day in Asia), seven unique croissant creations are being unveiled at seven Sofitel locations worldwide, each indulgent recipe being guided by beloved local flowers, from French verbena to Korean cherry blossoms. Since flowers play an integral part in Mother's Day, as well as inspiring Sofitel's signature floral art and stunning bouquets, floral themes guide the recipes. Discover all seven La Haute Croissanterie offerings, with each available for four months from their introduction, meaning travelers and locals have plenty of time to discover the collection.

SEOUL, SOUTH KOREA

Seoul Bom Blush

Take a moment to cherish the appearance of this gourmet croissant at Sofitel Ambassador Seoul Hotel in the South Korean capital. The traditional croissant roll takes on a new form in the shape of a cherry blossom flower, as pleasing to the eye as the flowers themselves. Smooth raspberry gel glows with the same vibrancy, and cherry blossom whipped ganache builds the scents of spring into this exceptional example of La Haute Croissanterie.


Cherry blossoms, known locally as beotkkot, are revered in Korea due to the fleeting nature of the blossoms and their importance in signaling the arrival of springtime. The graceful beauty of the pink, white and red flowers also contributes to the adoration of cherry blossoms.

 

MEXICO CITY, MEXICO

Indulge in the fusion of velvety vanilla cream and the enlivening tang of marinated Mexican plum, a culinary creation conceived by Sofitel Mexico City Reforma. Naturally, these flavors are brought together by the unmistakable butteriness of French croissants. In this epicurean fusion of cultures, ingredients overlap in layers to create an intricate taste profile and all the color of Mexican cuisine.


Floral notes come from dahlia, the national flower of Mexico. Dahlias were also an integral part of Aztec culture, with the tuber roots being a food crop, while the hollow stems were used for transporting water. Elderflower, also native to Mexico, adds summery hints of flowers, citrus, and honey, and its flavor has even graced royal wedding cakes.

The flaky, two-toned crust of the Floral Saffron croissant is infused with saffron petals. What better ingredient than saffron to represent global traditions of epicurean luxury? This spice derived from the bright-red stigmas of the crocus sativus flower is so exclusive and sought-after because each stigma must be picked by hand, and each flower only provides three red threads. The hibiscus flower is similar to cherry blossom flowers, having delicate petals that form its rounded shape, but hibiscus exists in many different colors. The flower's petals are represented by pastry at Sofitel Cotonou Marina Hotel & Spa, with hibiscus cream adding richness, and fresh strawberries contributing freshness.


Hibiscus was cultivated in West Africa and has been part of culinary life for centuries. Tea textured by the flavor and fragrance of hibiscus is part of daily routines and social gatherings. The perfect flower around which to form this unique croissant with the floral charm that marks Mother's Day everywhere, from France to Benin.
