Experience the elegance of asparagus like never before with our Asparagus Artistry menu. This 3-4 course dinner celebrates the versatility of asparagus with creative pairings and luxurious ingredients. Begin with the Asparagus Tartlet, featuring green asparagus, salicornia (sea asparagus), egg gel, mushroom and kombu duxelle, complemented by sea grapes. Then, indulge in a velvety White Asparagus Velouté, made with premium white asparagus from Holland, paired with Hokkaido scallops and asparagus ragout. For the main course, enjoy Black Cod with Egg Floss Crust, served with charred green asparagus, radish gateau, and tobiko sauce, offering a perfect balance of flavors and textures. Finally, indulge in the playful yet indulgent Asparagus Au Chocolat, where white chocolate shaped like asparagus is paired with truffle and dark chocolate "soil" and topped with olive oil caviar.
