Since 2008, Chef Ibtissam Elbanaoui has been the creative force behind the sweet delights of Sofitel Marrakech Palais Impérial & Spa. Driven by passion, boldness and a deep respect for Morocco’s terroir, she reinvents French viennoiserie with a refined and inspired touch.

Her expertise has earned her the role of ambassador for La Haute Croissanterie in Southern Europe & Morocco. The chef continues to push boundaries, infusing each creation with the spirit and flavours of her homeland.

In Marrakech, orange blossom water is far more than a fragrance; it is an invisible imprint, a warm memory suspended in the air of the medina. It is woven into the city’s culture: in the refreshing water served to guests, in fragrant mint tea and in golden pastries kissed by the Moroccan sun.

Inspired by this essence, Chef Ibtissam has created a croissant that captures the very soul of Marrakech, delicately laminated, infused with orange blossom water and dusted with candied orange zest. Each bite evokes lively alleyways, soft laughter behind moucharabiehs and the call to prayer at dawn.

This collection is a poetic tribute to Morocco’s sensory heritage, to a journey, an emotion and an invitation to dream.

As part of this limited-edition chapter of La Haute Croissanterie, Sofitel joins forces with Nespresso to reinterpret one of the most iconic rituals of French art de vivre: coffee and croissant.

At Sofitel Marrakech Paliais Impérial & Spa, this collaboration comes to life through a refined gourmet experience combining signature pastry creations, Nespresso coffee and a carefully crafted tasting ritual designed to awaken the senses.

Sofitel’s chefs have brought La Haute Croissanterie to life through three signature creations, each thoughtfully paired with a Nespresso coffee recipe to reveal new harmonies of flavour, aroma and texture.
