Since 2008, Chef Ibtissam Elbanaoui has been the creative force behind the sweet universe of Sofitel Marrakech Palais Impérial & Spa. With passion, boldness, and a deep respect for Moroccan terroir, she reinvents French viennoiserie with a refined, inspired touch.

Her remarkable expertise has earned her the role of ambassador for La Haute Croissanterie across Southern Europe. Chef Ibtissam continues to push boundaries, infusing every creation with the spirit and flavors of her homeland.

Orange blossom water in Marrakech is more than a scent, it’s an invisible imprint, a warm memory suspended in the air of the Medina. It permeates the city’s culture: in the refreshing water served to guests, the fragrant mint tea, and the golden pastries kissed by the Moroccan sun.

Inspired by this essence, Chef Ibtissam created a croissant that captures the very soul of Marrakech, flaky and delicate, infused with orange blossom water and sprinkled with candied orange zest.
