Astonishing flavours, in keeping with each season

Savour balanced dishes that surprise and delight with their seasonality and creativity. In summer, the unexpected comes in the form of verbena oil, zucchini flowers or wild za’atar. Springtime brings one of Chef Martin’s signature dishes: trout from the Basque town of Baigorri, served with a sea asparagus gremolata. He also loves to experiment with cheeses and sweets, giving each a seasonal twist.
