Chef Sylvain Touati

Marseille-born chef Sylvain Touati grew up in the Endoume neighborhood, close to the Mediterranean Sea that deeply inspires his cooking.

Trained at Institut Lyfe and experienced in top Parisian kitchens, he completed his apprenticeship in Dijon before returning to Marseille in spring 2024 to lead Les Trois Forts.

His cuisine is simple yet precise, elevating local ingredients with creativity and elegance.

Each dish reflects the spirit of Marseille, blending childhood memories with the richness of the Mediterranean terroir.
