After honing his skills in Paris, Chef Sylvain Touati settled in Marseille. Here, between the waves of the Mediterranean and the flavours of Provence, a love affair was born. In our gourmet restaurant Les Trois Forts and our rooftop Le Dantès Skylounge, Chef Touati presents the very best of local produce, elevating it with a tantalising touch of audacity.
